**Zucchini Mexican Casserole**


It's Here...
The Casserole of the Century
Healthy, Hearty, Cheesy, Magical

Let us Begin

I took my favorite "classic" Mexican casserole, and tried to make it EVEN healthier. I replaced tortilla chips (not so healthy), with Zucchini (way more healthy). The result was nothing short of a casserole miracle. 
Now, I share it with you.
(If you are a fan of my Zucchini Casserole, you'll find this a little familiar)

First
Your Ingredients:
*Ground Turkey
*Taco Seasoning (I use reduced sodium, feel free to make your own)
*Zucchini (I used 2 medium)
*Bell Pepper (I only had one, but the more the merrier!)
*"Rotel" (I use off brand)
*Chili Beans (or whatever beans make your heart happy)
*Cheese (not pictured, sorry, but you know what cheese is, use your fav)
**Anything else you want to add! This casserole is your oyster! Go nuts!
(Onions would be good, but I don't like onions so I leave them out)



 Step 1:
Go ahead and cook up that meat. You know what to do. Once cooked, add your taco seasoning, then beans and Rotel.
If you are adding onion, cook them up before you brown your meat so they are all soft and what not.


Step 2:
While your meat mixture is simmering, cut up those veggies!

Step 3: 
Start your Layers
Zucchini and peppers
Add 1/2 the meat mixture
Duh...CHEESE
Start all over! 
More meat, more cheese!
Step 4:
Put that bad boy in the oven, at 350, for about 30 minutes.

Then....


What you have is a healthy, happy explosion of awesonmess! 

If you are doing the 21 Day Fix, I'd say one HUGE serving is:
1 Green
1 Red
1 Blue

Oh...and I almost forgot the most important part! 
It's always best to cook with wine!
